Make Black Eyed Susan's' Capellini for Your Next Dinner Party

As summer comes to a close and seasonal residents start the trek back home, Black Eyed Susan’s shares the recipe for its popular capellini to cure those off-season cravings.


INGREDIENTS


• 6.5 pounds of San Marzano tomatoes

• 1 medium onion, diced

• 1 small carrot, diced

• 1/4 cup minced fresh garlic

• 10 basil leaves, chopped

• 3 small plum tomatoes, diced


INSTRUCTIONS


  1. Sauté garlic in olive oil over medium-high heat until it just starts to turn golden.
  2. Add diced onion and carrot. Cook until onion is translucent.
  3. Add San Marzano tomatoes and season with salt and pepper.
  4. Reduce heat to medium-low and cook for 2.5 hours, stirring often.
  5. Purée the sauce and return to the pot, along with the diced tomatoes and basil.
  6. Toss with capellini or your favorite pasta and serve with grated Parmesan.
